What wine goes with crayfish?

Nov 3, 2026

Choose a crisp, dry white or a brut sparkling wine. Crayfish are shellfish, and in Finland they are served with fresh dill, so we look for clean acidity and fresh flavours. Wine Folly pairs Sauvignon Blanc with crab and lobster, and says Cava suits shellfish. Several of our pages name shellfish. We send to Finland.

What is a Finnish crayfish party?

thisisFINLAND, a site produced by Finland's Ministry for Foreign Affairs, says the crayfish season runs from late July to the end of October. Restaurants host crayfish feasts, and many Finns organise private parties at home or at summer cottages. The crayfish are served with fresh dill. At one party the writer found an ice-cold schnapps and a beer by the plate. At another, guests could choose from beer, mineral water, soft drinks, wine, schnapps and vodka. So wine has a place at the table.

What does crayfish ask from a wine?

Crayfish are shellfish, so we use Wine Folly's guidance for crab, lobster and other shellfish.

  • Acidity. Wine Folly says white, sparkling and rosé wines often balance richness with acidity. A crisp wine keeps a shellfish dish fresh in the mouth.
  • Intensity. Wine Folly says the wine should have the same flavour intensity as the food. A light, dry wine suits a delicate dish.
  • Dill. Wine Folly lists dill among the green herbs that suit Sauvignon Blanc, and lists mussels, crab, lobster and clams among its shellfish pairings.

Which whites suit crayfish?

Each detail comes from the product page.

  • Painted Cat Sauvignon Blanc: sold in PET. The page describes lively citrus aromas, green apple freshness and subtle tropical notes, with minerality, a clean finish and balanced acidity. It suggests grilled fish, prawns or oysters.
  • Ticket Picpoul de Pinet: a French white made from Picpoul Blanc, from the Picpoul de Pinet AOC in the Languedoc. The page describes lemon and green apple, grapefruit and lime zest, a crisp, citrus-driven palate with mouthwatering acidity, and a briny minerality. It names oysters, prawns and mussels.
  • Soalheiro Alvarinho: made from 100% Alvarinho in Monção e Melgaço. The page describes a medium-bodied white with lively acidity, a touch of salinity and a long, crisp finish. It says the bright acidity and fruit notes suit seafood, including grilled fish and shellfish. Our Alvarinho guide explains the grape.
  • Porta 6 White 3L: a bag-in-box. The page calls it a crisp, refreshing white that suits shellfish, salads and simple weeknight meals. It is a practical choice for a longer table.

For the grape in the first bottle, read our Sauvignon Blanc guide. More whites are in the white wine collection.

Which sparkling wines suit crayfish?

Wine Folly says Cava pairs with a wide range of foods, including seafood and shellfish.

  • Josep Masachs Tradicional Cava Brut: from Penedès, made from Xarel·lo, Macabeo and Parellada. The page gives 11.6% alcohol and 6 g/L of residual sugar, which it calls a brut, dry style. It was made by the traditional method and aged 14 months on the lees. The page suggests seafood and shellfish, such as oysters, grilled fish or sushi, and serving at 6 to 8 °C.
  • Pizzolato Doc Prosecco Brut: an organic Prosecco from Veneto, described as a brut, dry style, with a crisp finish and lively acidity. The page suggests fresh seafood or fish dishes, such as sushi, grilled shrimp or lemon-pepper salmon.

Our guide to Prosecco, Cava and Portuguese sparkling wine compares the styles. See all bottles in the sparkling wine collection.

What about rosé or red?

Wine Folly counts rosé with white and sparkling wines among the wines that balance richness with acidity. Porta 6 Rosé is described on its page as fresh, alive and crispy, so it is an option for a table that prefers rosé. Wine Folly's rule puts red wine with bold-flavoured meats, which is why we start with white.

How should you serve them?

Serve the wines well chilled. The Josep Masachs page says 6 to 8 °C for the cava, and the Soalheiro page says 8 to 10 °C. Wine Folly's rule of thumb is 3 to 7 °C for sparkling wine and light whites, and 7 to 12 °C for rosé and full-bodied whites.

Which one should you pick?

  • A crisp white with herbs and green apple: Painted Cat Sauvignon Blanc.
  • A white with a salty, briny edge: Ticket Picpoul de Pinet.
  • A white for a large table: Porta 6 White 3L.
  • A dry sparkling wine for the start of the party: Josep Masachs Tradicional Cava Brut.

These are our suggestions. If the crayfish come with a rich sauce, a fuller white may suit better. See our guide to wine with salmon and other fish for fuller whites.
