Grape Origin & Winemaking

The grapes are harvested at optimal ripeness in Vallemayor’s El Bujed vineyards in La Rioja, Spain (Sauvignon Blanc in late August and Viura in early September) to capture maximum flavor and aroma . Gentle pressing and cool, controlled fermentation (at 12–16 °C) preserve the grapes’ natural character, aided by selected aromatic yeasts to enhance its bouquet . After about 19 days of fermentation, the young wines are blended and clarified with natural pea protein and bentonite – a vegan-friendly fining method – then bottled by the following January to lock in their fresh fruit profile .
