Casa da Passarella O Winemaker Vinhas Velhas

This wine is born from a single 80-year-old vineyard, so it is through it that we intend to take on the unique terroir of that plot. The old vineyard is a group of vines from around 24 different varieties (including some white varieties, as was completely normal at the time) which, over the course of almost a century, naturally adapted to that plot, in perfect harmony.

The harvest is manual and done in one go, with the fermentation of the entire grape blend carried out in a traditional cement vat.

As a result of the natural balance provided by the vineyard, fermentation takes place spontaneously, without any need to correct the must. This is how we embrace our terroir - with a minimalist wine in our cellar.
