The queen grape variety of Dão, Encruzado reveals in a unique way the legendary elegance of the region's wines.
The harvest is manual and made into 12kg boxes, with vinification taking place with a long pre-fermentation maceration, followed by light pressing. The must is then sent to a natural decantation process, and fermentation takes place slowly in used 600-liter French oak barrels. In the wine aging process, battonage is carried out in traditional cement vats and a small percentage in barrels. Once this process is complete, the wine continues in the sur lies stage, increasing its natural complexity.
