Chip Dry is produced using the traditional winemaking method for port wines, adding wine brandy to the must to stop fermentation and preserve some of the grape's natural sugar in the final wine. In the case of Chip Dry, the brandy is added later, when most of the sugar has already been converted into alcohol, thus producing an unusually dry port.
